Baked Courgettes (own recipe)













Ingredients/(4persons portions): 1courgette ,2 tomatoes,cauliflower(1/4 from a medium one),2-3eggs,50 g feta cheese,4tbs organic lowfat yogurt ,3tbs sour cream ,3tbs fresh small cutted dill ,peper &salt (not too much , feta cheese is salted too),2-3tbs butter . We cut slices all vegetable (medium size->big),put them all toghether with the butter and 2 glass of warm wather to steam under medium heat for about 10-15min .After that add the dill,sal t&black pepper at the end when you are ready to set all in a big aven tray (i put some butter previously on it)as in the pic . Before covering all steamed vegetable (that by now are half done) put some feta cheese on the top (as pictured) after that add the separately mixted (eggs with the yogurt ,the sour cream and little dill/peper/salt) and cover all well. Bake in the aven other 10-15 minutes on 200->250F until you see the egg on the top is changing the color in dark yellow->light brown .I use the pizza knife to cut squares and at the end on the plate the food look like rows of vegetable ,chesse &eggs and it will feel flufy and will melt in youre mouth. The smell will invite all friends and familly toghether :D . Very light food ,can be served as it is or next to some garlic bread or next to any cooked meat/steack .Looks and taste incredible good !
